Crispy cheese chips in 1-2-3!

Hello everyone! 

I am so thankful that weekend is here.. oh wait.. I am going to work Saturday too. Oh well, I am still allowed to have a little weekend-feeling anyway right?

I finally got to test how cheese chips taste like, and my verdict is… quite awesome! I am happy to share with you here my results. But first a quick explanation of how I made them.

Method

  1. Take the amount of cheese that you want. I took around 4-5 slices and then cut them into 4 pieces (triangles).
  2. Put the cheese in a pan (I had to use two rounds) and add some spice if you want. I also added a little grated parmesan cheese on top (but it is not necessary). In the first round I used barbeque spice and in the second round I used sea salt.
  3. Fry in 200 c in hot air (I think they get more crispy then.. and more like real chips)
  4. Take it out and cool down for a little
  5. Serve with creme fraiche mixed with the spice of your choice. I used paprika and parmesan nuggets, and the combination was great!

LCHF Saturday Night Pizza

This pizza I made last weekend. The dough does not contain wheat and is low-carb friendly. I even took some leftovers at work for lunch and when asked if it was low-carb and I replied “yes”; someone said: ” Oh but it does not look bad, it seems good”. Well yes that is probably a common misunderstanding.. People that is cutting carbs cannot eat something good. The thing is we can eat everything, but we have to find replacements.

For the dough you need: 

  • 4 eggs
  • 4 tbsp of cream
  • 2 tbsp oil
  • 1 teaspoon of baking soda
  • 2 tbsp psyllium husk
  • 2 decilitres of grated cheese (make sure that it is cheese without much carbs)
  • 3 tbsp sesame seeds
  • salt
  • oregano

Method

  1. Turn the oven on maximum temperature
  2. Mix all the ingredients and leave the dough for about 15 minutes
  3. Use a baking sheet and cover the pan for the oven
  4. Pour the mass to a baking sheet and try to make it as thin as possible
  5. Fry in the oven till it gets color
  6. After you take the dough out of the oven and add the rest of the ingredients for the pizza and fry till the cheese has melted

Tomato sauce:

  • 1 box of chopped tomatoes (make sure it is one with less carbs)
  • 2-3 tbsp of tomato puré
  • Around half an onion
  • 2 garlic cloves
  • 2 tbsp olive oil

Method

  1. Fry the onion and garlic in olive oil
  2. Add the sauce
  3. Add spices: For instance cumin, paprika, oregano, basil, salt, pepper
  4. Let it boil on low temperature for a while

For the topping:

I used minced meat and chicken fried in a pan and some Spanish chorizo. But here you can use whatever you want.

A typically weekend in Norway

As a Norwegian I grew up hiking in the forests and climbing mountains (an obvious reason for that is because Norway is full of mountains and covered by forests). I was not born a city girl (even though I am living in the capital of Norway now) and I did not have to go very far to find the most unbelievable nature scenes you can imagine.

So on a typical weekend here I go with my boyfriend for walks in the forest and enjoy to combine a nice walk and exercise at the same.

And to finish a tour, Norwegian style, we barbecue some chicken fillets, pork chops or turkey. And of course we always bring some additional side dishes, like a fresh salad. You do not even need a recipe for that!
