Salmon with avocado and fresh lime dressing

So this was the dinner I started my week with. Salmon is something I eat at least once a week, and to not get completely bored by this tasty fish is to try different things to combine with it. I do not eat a lot of potatoes and pasta so it is important to find alternatives.

For one person this is what you need:

  • 1 salmon fillet (make sure it is skinless)
  • 1 avocado
  • Salad (of your choice)
  • Cucumber (as much as you want)

The dressing:

  • 2 tbsp chopped mint
  • Grated zest if half a lime and juice of half a lime
  • 1 tbsp honey ( I used Cretan honey from Greece)
  • 1,5 tbsp olive oil

If you want to make a larger portion of dressing for later use just double it.

Method

1. Turn on the oven at 180-200 c
2. Season the salmon with the spice of your choice and add some oil.
3. Mix the ingredients together for the dressing and cut the avocado and cucumber to slices. Add the salad of your choice to a plate and decorate with the avocado and cucumber slices. Use half of the dressing that you made.
4. Cook in the oven for approximately 20 minutes. Place the salmon fillet on top of the salad in a plate and use the rest of the dressing.
